In order to make a good smoked salmon pate you need the finest trimmings. Trimmings are used because they contain the pellicle from sliced salmon. This comes into contact with the smoke the most during the smoking process and is thus strong in flavour. Our trimmings come in 450 g (1 lb) packs.
