Cooking time less than 10 mins
Ingredients
knob of unsalted butter
300g/10oz cooked basmati rice
250g/8oz salmon smoked
2 hard boiled eggs, roughly chopped
1 tbsp fresh parsley, chopped
a good dollop of double cream
salt and freshly ground black pepper
Method
1. Melt the butter in a large frying pan.
2. Place all other ingredients in a large bowl, season generously and combine
well.
3. Add the mixture to the pan and stir over a high heat until heated through.
Serve immediately.
